Tomato basil soup

I’m writing this at the very end of August, which is when the bushes are full of tomatoes and there is fresh basil in abundance.

Every summer, I either grow or ask a farmer for a HUGE amount of basil to freeze. In a food processor, I’ll whiz up a few garlic cloves, a bit of salt, as much basil as I can fit in the maching and blend it up with enough olive oil to make a paste. Then I’ll put this into ice cube trays to freeze. That gives me fresh basil flavor all year long.

Having a soup as your first course can help control blood sugar spikes. I especially like very low-carb cream soups like this one. The fat tells your gastric emptying to slow down, which time-releases the rest of your meal.
